Some of my favourite recipes and any others I find within our community.
Before your berries go bad muffins!
1/2 cup melted coconut oil
1/2 cup maple syrup
1/2tsp of vanilla
1 cup of flour (your choice here, I used whole wheat because I had nothing else)
3/4 cup full fat plain Greek yogurt
1 1/2 cups of oats
1/2tsp baking powder
1/2tsp of baking soda
Sprinkle of salt
Preheat oven to 350 and grease or line your muffin tin. This recipe made a perfect 12 muffins when using a large cookie scoop.
Blend first three ingredients together, making sure your eggs are at room temperature or it will mess with the melted coconut oil. Add vanilla and yogurt and mix well.
Usually this is where a recipe would suggest you mix your dry ingredients in a separate bowl but my son is still asleep and I don’t want to do more dishes with my extra alone time. So I dumped everything else in the same bowl.
Then add 1 cup of your favourite flour, the oats, salt, baking powder and baking soda. If the mix looks to soupy add a bit more flour or oats, but give the oats a few minutes to expand. I didn’t level the dry ingredients so it was kind of a guess. So if you waited a few minutes and it still looks too wet add a bit more oats or flour.
Scoop into muffin tin and bake for 15-20 minutes. Oven time will vary but they should be golden brown on top!
