Plant Based Banana Chocolate Spelt Waffles

Ready for the fastest waffle recipe ever? My Plant Based Banana Chocolate Spelt Waffles are made in a Vitamix, and ready in 20 minutes total! That includes the 10 minutes the batter needs to rest. This recipe also works great as a pancake batter if thats what youre into!

We decided to top these with bananas, a pretty chocolate drizzle, walnuts and maple syrup. Hudson says he prefers just maple syrup on his. For the chocolate drizzle we used Enjoy Life Chocolate chips melted with a little bit of coconut oil. Both products came from Joannes Place here in Peterborough.

I have talked a little bit about my diet over the past few months as well as my health. This is in no way a judgement of people who choose to eat meat, everyone has to make choices that are right for them. What is important is educating yourself and paying attention to what your body is telling you. For a long time I have felt the effects of long term chronic stress. My diet was also a cause of extra inflammation in my body. There is simply no denying that certain foods trigger different responses in people’s bodies. We are also at a time that environmentally we can no longer deny that the way we are choosing to eat, isn’t having devastating effects on the sustainability of our planet. If I can help people eat a little more consciously by creating some delicious recipes then I will continue to do my part.

It took me awhile to adjust to not just grabbing eggs to bake, and instead figure out a new method that would be equally as delicious. And I am here to tell you that it is completely possible. I am still a work in progress. I am still doing some baking with eggs, but I am finding my way slowly, but surely. And want to help you do the same. Whether it be for the environment, your bodies happiness, for the sake of animals or whatever you choose I hope to help you along the way.

Equipment

  • Waffle Maker

Ingredients

  • 1 3/4 cups Spelt Flour
  • 1 tbsp Ground Flax
  • 2 tbsp Pumpkin Seed Protein Powder
  • 1/2 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 Bananas
  • 1 1/4 cups Unsweetened Almond Milk
  • 2 heaping tbsp Unsweetened Apple Sauce
  • 1 tsp Vanilla

Instructions

  • Easiest Recipe Ever!
    Place all ingredients in a high speed blender such as a Vitamix or any blender will do. Even an immersion blender. Blend ingredients on high for 1 minute or until all ingredients are combine. Let you batter sit for about 10 minutes so that the spelt flour has time to absorb some of the liquid. Preheat your waffle maker. After pouring some of your batter into your waffle maker top with Enjoy Life Chocolate Chunks! When your waffles are done the top of your waffle maker should open easily. If it does not then your waffles need more time to cook.
    Top your waffles with extra chocolate, male syrup, walnuts or whatever you fancy! Enjoy!
